Cacao-Strawberry Overnight Oats

Ingredients
  • ½ cup gluten free rolled oats
  • 1 cup greek-style kefir (higher protein than traditional kefir)
  • 2 Tbl unsweetened vanilla coconut milk (this is a milk substitute and can usually be found in the refrigerated milk alternative section, it is not the canned coconut milk you find in the grocery isle. You could also use plain milk, or any nut milk)
  • 1 Tbl chia seeds
  • 1 Tbl cacao nibs
  • 1 Tbl shredded unsweetened coconut
  • 1 Tbl maple syrup
  • 1 tsp cinnamon
  • ½ cup fresh strawberries
Instructions
  1. Place all ingredients except strawberries into a mason jar or other pint-sized jar with a lid.
  2. Put the lid on and shake to mix all ingredients thoroughly.
  3. Place jar into the refrigerator overnight.
  4. In the morning, put the oats into a bowl and top with sliced strawberries.
