Winter Smoothie Bowl

Ingredients
  • 1 cup chopped kale (frozen or tightly packed fresh)
  • 2 cups chopped cauliflower (fresh or frozen)
  • ½ cup blueberries (fresh or frozen)
  • ½ cup chunked beets (fresh or frozen)
  • 2 Tbl collagen powder
  • 2 Tbl coconut butter, flax seed/hemp/chia seeds, or almond butter
  • 1 Tbl raw unsweetened cacao powder
  • 1 Tbl raw honey or 5 drops of liquid stevia
  • ½ inch sliced ginger (optional)
  • ½-1 c boiling water
  • Optional toppings: slivered almonds, dried unsweetened coconut, chia seeds, cacao nibs, granola, etc.
Instructions
  1. Place all items into a high-powered blender with the kale at the bottom.
  2. Start with ½ cup boiling water and add more during blending until desired consistency has been reached.
  3. Blend on high for 1-2 minutes.
  4. Top with favorite toppings and enjoy!
