Chilled Cucumber Dill Soup

Ingredients
  • 3 English cucumbers, peeled and cut in to chunks
  • 2 bunches/clam shells baby dill (about ½ cup)
  • 1 cup yogurt (I recommend plain almond yogurt)
  • ¼ cup extra virgin olive oil
  • ¼ cup water
  • 2 tsp salt
  • 1 TBL lemon juice
  • Zest, 1 lemon
  • 2 TBL coconut aminos
  • 1 small avocado
Instructions
  1. Pick the dill off the stems. (the tender stems are fine.)
  2. Put everything in a blender.
  3. Puree until smooth.
  4. Chill in refrigerator for at least 1 hour.
  5. Enjoy!
