The superpower smoothie won’t win any beauty contests, but it’s delicious, energizing, and will leave you feeling amazing. This concoction has everything our bodies need to thrive: 28g of high-quality protein, no added sugar, potent anti-oxidants and anti-inflammatory compounds, several strains of probiotics, tons of fiber, and some healthy fat.
The protein I use and recommend is a plain hydrolyzed collagen powder. This protein powder has no discernible flavor, so it can be added to many recipes (recently I added it to a batch of my Roasted Cauliflower and Squash Soup). I choose to use collagen powder (as opposed to whey, soy, or other types of protein) for it’s gut-healing properties and the hydrolization process ensures easy digestion and utilization of the protein.
Although this recipe does contain some naturally occurring sugars from the fruit, kefir, and coconut water, there isn’t any added sugar, which is the primary concern for health. The high anti-oxidant and anti-inflammatory properties come from the blueberries, ginger, and turmeric. The dried, unsweetened coconut adds a nice nutty flavor to the smoothie along with healthy fats. And with 14g of fiber, this smoothie will give you more than half the recommended daily intake of fiber — helping to ensure regularity. Finally, the fermented coconut water and kefir both contain high levels of probiotics which are essential for maintaining proper gut health.
When my day doesn’t allow a cooked breakfast, I enjoy this smoothie and the sustained energy it provides.
- 1 cup Blueberries, frozen
- ¼ cup Bananas, frozen
- 3 Tbl Coconut Meat, dried, unsweetened
- 1 cup Kale, frozen,
- 2 tablespoons Collagen Protein Powder (unflavored)
- ½ cup Kefir
- ½ cup Fermented Coconut Water
- ½ tbsp Turmeric root, minced
- 1 tbsp Ginger root, chopped
- ¼ cup Water
- Chop ginger and turmeric into small pieces.
- Add all ingredients to blender and blend until the mixture reaches the desired consistency.
