Winter Smoothie Bowl with Cauliflower, Kale, and Beets

Smoothies are one of the easiest ways to enjoy a nutrient-packed meal. But in the cold winter months drinking a frozen smoothie can be quite unappealing. Because I hate shivering through winter, for the past few months I’ve played around making thicker room temperature and warm smoothies. I enjoy this winter smoothie bowl with a spoon and some yummy toppings.

Some have asked what the difference is between a warm smoothie bowl and a soup. Honestly I don’t know, but this smoothie bowl is thicker than most soups I’ve eaten (stews would be an exception, but they’re chunky not smooth). Also, soup is usually hot. This winter smoothie bowl won’t be hot… it might be warm if you use all fresh ingredients, but it won’t be hot. But if it feels better to call this a soup, go for it!

The ending temperature of the smoothie bowl will vary depending on the ratio of fresh to frozen produce you use. If you use all frozen produce with the boiling water, the smoothie will be cool. If you use all fresh produce and boiling water, the smoothie will be warmish. I’ve found that even when I use all frozen produce, the ending temperature is much more tolerable during winter than a truly frozen smoothie. It’s also worth noting this smoothie is only supposed to have a hint of sweetness, so if you’re used to very sweet smoothies, this one might take a little getting used to.

Serves: 1 serving
Ingredients
  • 1 cup chopped kale (frozen or tightly packed fresh)
  • 2 cups chopped cauliflower (fresh or frozen)
  • ½ cup blueberries (fresh or frozen)
  • ½ cup chunked beets (fresh or frozen)
  • 2 Tbl collagen powder
  • 2 Tbl coconut butter, flax seed/hemp/chia seeds, or almond butter
  • 1 Tbl raw unsweetened cacao powder
  • 1 Tbl raw honey or 5 drops of liquid stevia
  • ½ inch sliced ginger (optional)
  • ½-1 c boiling water
  • Optional toppings: slivered almonds, dried unsweetened coconut, chia seeds, cacao nibs, granola, etc.
Instructions
  1. Place all items into a high-powered blender with the kale at the bottom.
  2. Start with ½ cup boiling water and add more during blending until desired consistency has been reached.
  3. Blend on high for 1-2 minutes.
  4. Top with favorite toppings and enjoy!
