This neon green apple smoothie is tart, sweet, and a little spicy. It’s quickly become my new favorite, I think you’ll enjoy it too.
The green apple and dates lend subtle sweetness. The lemon brings a kick of sour and brightness. The cayenne pepper and pinch of salt make it perfectly complex. You’ll never know there’s a big dose of kale and protein hidden inside this delicious frothy concoction.
I get lots of questions about the particular protein powder I use and to be honest, there are lots of good options. I use this collagen protien powder because it’s hydrolyzed (easier to digest and absorb) it’s made from cattle that were grassfed, it’s less expensive than some of the other brands, and I’ve never seen an advertisement for the product (so I don’t feel like I’m paying for their marketing). As for plant-based proteins I prefer hemp or pea-based powders. This plain hemp powder is what we use and it’s great. While I have both of the protein powders linked above in our home, they have different uses. If you struggle with gut health, auto-immune issues (often a sign of poor gut health), or gluten sensitivities (also a sign of poor gut health), the collagen protein powder is likely your best option. However, if your gut is in good health and you can handle the extra fiber, the plant-based proteins are better for the environment. Make sure to get an organic plant-based protein to avoid pesticide and herbicide residue.
- 1 Granny Smith apple
- 2 stalks celery, about 3 ounces
- 2 dates, pitted
- ½ Lemon, juice only
- 1 ounce baby kale (a large handful)
- 2 Tbl plain unsweetened collagen or plant-based protein powder
- Pinch of cayenne pepper (optional)
- Pinch of salt
- 1 cup water
- Place handful of baby kale into the bottom of the blender.
- Chop apple, celery, and dates in to chunks and place into blender.
- Add lemon juice, protein powder, salt, cayenne pepper, and water to blender.
- Blend on high for about 1 minute or until all of the date chunks have been completely processed.
- Pour into your favorite glass and enjoy!
